Freshers’ Guide: Easy Veggie Frittata

I don’t know about you, but cooking has been just about the last thing on my mind since being back in St Andrews. With all of the excitement of being back in town and the start of a new semester, cooking and eating healthy can easily take a backseat. However, with the start of classes its time to get back in the swing of cooking for ourselves again, and the best way to do that is with a really delicious, and really simple recipe. For a dinner that requires only a few ingredients and little cooking time, one of my favorite meals is a vegetable frittata.

A traditional Scottish dish, stovies are both budget friendly and easy to prepare. Even the most inexperienced of cooks will find it difficult to muck up this dish!
