Champagne Cupcakes

Ingredients:
1 package vanilla cake mix
1 1/3 cups champagne*
3 egg whites
1/3 cup vegetable oil
1 Tablespoon grated orange zest

* Champagne can be substituted for sparkling grape juice

Method:
Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit). Grease two round cake pans or put liners into standard muffin/cupcake tins.

In a large bowl, combine cake mix, champagne, egg whites, oil and zest. Beat with electric mixer (if you have it) for about 2 minutes. Pour into cake pans or spoon into cupcake liners. Bake for 18 minutes for cupcakes or 25 for cake. Cool in pans for 5-10 minutes, remove and let cool completely.

Frost with your favorite whipped or buttercream frosting and enjoy!
