I don’t know about you, but cooking has been just about the last thing on my mind since being back in St Andrews. With all of the excitement of being back in town and the start of a new semester, cooking and eating healthy can easily take a backseat. However, with the start of classes its time to get back in the swing of cooking for ourselves again, and the best way to do that is with a really delicious, and really simple recipe. For a dinner that requires only a few ingredients and little cooking time, another one of my favorite meals is red lentil soup.
- Sauté chopped onions in olive oil in a soup pan.
- When the onions are translucent add red pepper flakes (optional) and two cups of red split lentils.
- Add roughly 8 cups of water or chicken stock to the pan and cook for approximately 30 minutes until the lentils split open and the soup becomes thick.
- For some extra flavor, add a squeeze of lemon juice just before serving.
