Pancake nostalgia: Caramelised Apple Crêpes

Caramelised Apple Crêpes

  • 2 tablespoons butter
  • 1 1/2 cups milk
  • 2/3 cup plain flour
  • 1/2 teaspoon salt
  • 3 eggs
  • 8 apples cored
  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg

  1. Beat the 2 tablespoons of melted butter, milk, flour, salt and eggs together until smooth and set aside for at least half an hour.
  2. Core, peel and slice the apples. Place the second amount of butter into a pan along with the remaining ingredients and sauté until soft and brown. Keep warm on a minimum heat.
  3. Pre heat a pan and cook the batter for about 2 minutes, gently flip and cook ofr another 30 seconds.
  4. Add the apple filling and fold over half way.
