My sister, having recently undergone a Gwyneth Paltrow-esque health kick, has taken to sending me various healthy recipes to try out during revision. I very quickly dismissed some of them (I highly doubt that toasted spinach and pine nuts “taste just like popcorn”) but I must admit that some of them really are delicious and will most certainly be featuring heavily in my revision diet.
Add chia seeds and serve with agave syrup if you want to live the Goop life but I choose to add bacon and eat them guilt-free – I mean it’s one of your 5-a-day, right?
- 140g self-raising flour
- 1 tsp baking powder
- 2 tbsp light soft brown sugar
- 1 mashed ripe banana
- 1 sliced ripe banana
- 2 large eggs
- 25g butter (melted)
- 125ml milk
In a bowl, mix the flour, baking powder and sugar with a pinch of salt. Make a well in the centre and add the mashed banana, eggs, butter and milk. Whisk to a smooth batter without any flour lumps.
Heat a little butter in a large frying pan. Once sizzling, ladle in small dollops of the batter.
As they spread, put 2 or 3 slices of banana onto the surface and cook until bubbles appear. Flip the pancakes and cook for another minute until puffed and golden.
