Snacks to Freeze

Craving something a little sweet during these deadlines? Want something you can stress-bake and then munch on for days? Then these recipes are for you: healthy takes on desserts to use as an alternative to granola bars.

Healthy Apple Crumble Bars

Crust:

2 cups almond flour

1 cup rolled oats

¾ cup applesauce

2 tbsp sugar (or coconut sugar)

Filling:

3 apples chopped

¼ cup almond milk

2 medjool dates

1 tsp cinnamon

½ tsp nutmeg

  1. Using a 8×8 baking dish put ⅔ of the crust on the bottom and save the rest for the crumble top!
  2. Blend the filling together in a mixer. Bake in the oven for 45 minutes or until the crust browns.

 Carrot Cake Cookies

1 large carrot grated

1 medium banana

¼ cup oats

1 tbsp peanut butter (or other kind of nut butter)

1 tsp cinnamon

⅛ -¼ cup chopped walnuts or pecans

(optional 2 tbs raisins)

  1. Preheat the oven for 175 degrees Celsius.
  2. Grate the carrot and mash the banana, then mix in the ingredients and pop in the oven for 10-15 minutes.

Courgette Bread Cookies

1 large courgette grated

1 medium banana

¼ cup oats

1 tbsp peanut butter (or other kind of nut butter)

1 tsp cinnamon

(optional ½ small apple grated)

  1. Preheat the oven for 175 degrees Celsius.
  2. Grate the courgette and mash the banana, then mix in the ingredients and pop in the oven for 10-15 minutes.
