It is finally that time of year again! We have compiled some delicious pumpkin spice inspired recipes to get you through the November blues and get you into the *ahem*, Christmas spirit!
Basic Pumpkin Spice Mix
1tsp of ground cinnamon
¼ tsp of ground nutmeg
¼ tsp ground ginger
1/8 tsp of ground cloves
Toss everything together and sprinkle until your heart’s delight!
Pumpkin Spice Streusel Muffins
For the Muffins:
¼ cup of margarine
½ cup of caster sugar
¼ cup of soft brown sugar
2/3 cup of pumpkin puree
½ cup of buttermilk
Zest of ½ an orange
2 cups of plain flour
2 tsp of baking powder
1 tsp of basic pumpkin spice mix
For the Streusel Topping:
1/3 cup of plain flour
3 tbsp of brown sugar
2 tbsp margarine
In a large bowl, combine the margarine with the caster and brown sugar. Add the pumpkin puree, buttermilk, and eggs.
In a separate bowl, mix together the dry ingredients until well combined. Gradually add to the creamed mixture until just combined.
In a third bowl, coarsely combine the streusel ingredients until it resembles breadcrumbs.
Divide the mixture between 12 muffin cases and sprinkle with the streusel mix.
Bake in the oven at 375F/190C for 20-25 minutes, or until golden brown.
Pumpkin Spice French Toast
6 slices of whole wheat sandwich bread
splash of milk
½ cup of pumpkin puree
1 teaspoon of pumpkin spice mix
Whisk together the eggs, milk, pumpkin, and spice mix until smooth.
Dip each side of the bread and fry in a hot pan until crisp. Serve with syrup and icing sugar.
Pumpkin Spice Oatmeal
1 cup of oats
2 cup water
¼ cup of pumpkin puree
2 tsp pumpkin spice mix
brown sugar to taste
Combine all the ingredients and microwave on high for 2-3 minutes. Simple! You could add chopped nuts or fruit if you’re feeling exotic!
Pumpkin Spice White Russian
Step aside lattes, there’s a new November favourite in town.
50ml of Vanilla Vodka
25ml of coffee liqueur
100ml of cream
1 tsp pumpkin spice mix, plus a little extra for garnish
Shake all of the ingredients with ice, and enjoy! Potentially in the library.
