Valentines Day 3 course Menu

Valentines Day doesn’t need to be an expensive declaration of love through a visit to a restaurant. You can have an equally special night by making this delicious menu at home yourself. The baked Camembert and chocolate fondue ensure the meal is centred around sharing, which is perfect for couples or friends indulging! Just make sure whomever you make this for does the washing up-it’s definitely the least fun and romantic part!

Baked Camembert:

1 box of camembert.
1 clove of garlic, sliced.
1 sprig of rosemary, leaves picked off.
A small pinch of salt.
A drizzle of olive oil.
A large crusty baguette.

1. Preheat the oven to 180C.
2. Remove all the packaging from the cheese and place it back in the box with the lid doubled up under the base.
3. Score the top of the cheese with a knife and push in the crushed garlic, rosemary and salt, then drizzle with olive oil.
4. Place onto a baking tray and bake in the oven for about 30 minutes, until the cheese is gooey and oozing.

Serve with a crusty baguette for dipping into the delicious melted cheese.

Salmon parcels with roasted vegetables:

2 fresh salmon fillets
2 slices of lemon
A splash of white wine
1 red onion
2 red peppers
1 courgette
1 leek
2 large tomatoes
Olive oil
Herbs – rosemary and thyme preferably
Sea salt and black pepper for seasoning

1. Preheat the oven to 180C.
2. Chop all of the vegetables into reasonable sized chunks and place into a roasting tin. Toss with the olive oil, herbs and seasoning, making sure that everything is coated.
3. Cook in the oven for 20 minutes.
4. Whilst the vegetables are cooking make your salmon parcels. Place the salmon fillets on a large piece of tin foil and season lightly. Put a slice of lemon on top of each fillet and then add a splash of white wine for the fish to steam in. Seal the parcels by folding up the foil to make sure the juices and heat cannot escape.
5. Pop into the oven to cook alongside the vegetables for a further 20 minutes.

Serve warm with the juices of the roasted vegetables over the top of the fish.

Chocolate fondue:

250g Dark Chocolate
100g Milk Chocolate
300ml Cream
Marshmallows and fresh fruit to dip.

1. Pour the cream into a saucepan and heat over a medium heat until it is hot.
2. Add the two different chocolates and stir until they have melted and the mixture is smooth in texture.
3. Serve with fresh fruit and marshmallows to dip and enjoy chocolate heaven!
