Chocolate Brownies

Fact: there are few problems in life which cannot be fixed by a gooey chocolate brownie. The multifaceted dessert provides not only the perfect resolution to frost bitten winter months, but also act as delicious alternative to birthday cake.


125g soft butter
125g best quality dark chocolate.
2 large eggs
1 teaspoon vanilla extract
165g caster sugar
75g plain flour
100 chopped walnuts (or nuts of your preference)


Preheat the oven to 180 degrees Celsius. Line a small deep baking tray with greaseproof paper.

Melt the butter and chocolate together in a small pan over a low heat. Beat the eggs together with the sugar and vanilla extract. Once the butter and chocolate have melted, cool slightly and combine with the eggs and sugar. Measure the flour into the mixture and mix until the flour is fully incorporated. Stir in the chopped nuts and pour the brownie batter into the lined tin.

Bake the batter for 15-20 minutes, depending on your preference for gooey or cakey texture. Have some self-control, and let cool completely before diving in!
