Scottish Stovies

A traditional Scottish dish, stovies are both budget friendly and easy to prepare. Even the most inexperienced of cooks will find it difficult to muck up this dish!

Recipe serves 4

6 large floury potatoes such as Maris Piper

300ml semi-skimmed milk

2 medium onions

50g of butter

2 handfuls frozen peas

1 tin of corned beef

1 tbsp wholegrain mustard

Salt and pepper

Peel the potatoes and cut into small cubes. Place in a pan, cover with the milk, and bring to the boil. Reduce heat to a simmer and cook. Roughly dice the onions and fry in the butter until brown and soft. Cut corned beef into cubes. Cook the peas as instructed by the packet. When the potatoes have absorbed all the milk and acquired a soup-like consistency, mix in the onion, corned beef, peas and mustard. Season and serve hot.
