I don’t know about you, but cooking has been just about the last thing on my mind since being back in St Andrews. With all of the excitement of being back in town and the start of a new semester, cooking and eating healthy can easily take a backseat. However, with the start of classes its time to get back in the swing of cooking for ourselves again, and the best way to do that is with a really delicious, and really simple recipe. For a dinner that requires only a few ingredients and little cooking time, one of my favorite meals is a vegetable frittata.
- Whisk your eggs and pour into a sauté pan with whatever vegetables you have in the kitchen (I used green and yellow zucchini).
- Cook the frittata on the stove until it starts to firm up.
- After it has firmed up, pop it in the oven to finish it off. This ensures that it gets cooked evenly all the way through, and helps for a faster cooking time.
