Sweet Study Treats

These fun cookie recipes are the perfect study snack for revision! Feel free to add your own toppings to personalize the cookies! 

Power cookies Four ways

Base recipe

1 can chickpeas

120g spelt flour

30 ml maple syrup

3 tbsp coconut oil

1 tbsp vanilla extract

½ tsp baking soda

1 tsp apple cider vinegar

  1. Preheat the oven to 180 degrees Celsius.
  2. Place the chickpeas, maple syrup, coconut oil and vanilla extract in a food processor and blend until smooth. Combine with the remaining ingredients and blend until everything is mixed together.
  3. Choose one of the extra toppings from the recipes below to customize your cookie (e.g. oatmeal, chocolate or peanut butter cookies) and add to the mixture!
  4. Cook for 18-20 minutes or until golden brown.

Oatmeal Cookies

45g oats

40g raisins

30g walnuts

1 tsp cinnamon

Brain Boost with Dark Chocolate Cookies

1 bar dark chocolate broken into chunks (use vegan chocolate for a vegan alternative, I suggest Seed & Bean’s Sicilian Hazelnut fine dark chocolate)

65g walnuts

Peanut butter Cookies

65g peanut butter

(Optional: handful of peanuts or 38g dark chocolate chips)

 

Edible Cookie Dough Four Ways

This recipe uses the same base recipe as the power cookies, but are a bit more indulgent with toppings! Since this recipe contains no eggs or dairy products you can munch away to your heart’s content without getting sick (I promise).

  3. Choose one of the recipes below to add to the base recipe, or add your your own toppings!

Double Chocolate

2 Bars of chocolate (use vegan chocolate to turn this into a vegan friendly recipe)

1 Sleeve of Oreos

  1. Melt one bar and mix into the cookie batter. Break the other bar into chunks and combine.
  2. Place the oreos in a plastic bag and crush with a rolling pin, then mix with the cookie batter.

Berry Cookies

150g of berries (I suggest blackberries or marionberries, but any berries should work)

2 tbsp water

  1. Put half the berries and the water into a saucepan put on medium heat until the berries simmer, becoming a berry compote. Mix the berry compote into the batter and then add the other half of berries.

Cookie Dough Cookies

40g multicolored sprinkles

35g macadamia nuts

45g white chocolate

  1. Add the toppings into the mixture and enjoy!
